VEGAN & Oil Free Pancakes For the Win
This is my first recipe testing blog post! (internal yay)
My recipe
2 cups of flour 2 TBS baking powder 2 TBS sugar a few cracks of pink saltsplash of vanilla extract
1 3/4 cups of vanilla almond milk (add the last 1/4 to your consistency)
Optional: chocolate chips/ cacao nibs
Conclusion
I would half this recipe because it made so much batter. Like I was feeding the family I haven't made yet, a lot. Also her original recipe had nutmeg and cinnamon. I wasn't feeling that so I didn't add it. I wanted to make them s'mores flavored. But didn't end up added any marshmallows because, well, I don't have vegan ones and idk where to get them either.
But moral of the story make sure you add more milk so that they can be a little less dense. The original recipe really low key had the texture of a biscuit which would be cool if thats that I was going for. So I might adapt that for vegan biscuits one day!

Original Recipe
2 cups of flour
2 TBS baking powder
2 TBS sugar
1/2 tsp cinnamon
a dash of freshly grated nutmeg (1/4 tsp if using ground)
pinch of salt
1 1/2 cups + 1 TBS water
